"The frozen Sugo Tu pizza dough twins, Simon and Harry, and business partner Sam Ayash are now distributing throughout Sydney, and are already popular throughout the hospitality, restaurant and hotel industry, mostly because the dough works 100 per cent of the time.

Their traditionally made, slow-fermented, snap-frozen dough, created by Robert Vandenburg of the award-winning Sugo Mi restaurant in Brisbane, can now be found in Sydney delis and is set to spread far and wide.

"It's faster to cook and a lighter dough. I don't use a rolling pin," says Simon, demonstrating his dough stretching technique at a friend's pizza shop, Good Fellas in Newtown.
